I LOOOOVE these cookies. I can’t stop eating them!!! To make these gluten-free cookies, refer to my Chocolate Bathed Cookies recipe for the cookie dough. Then refer back to this post for the peanut butter portion.

Drop round balls onto parchment paper or a cookie sheet and make an impression with your thumb.

Scoop a little bit of peanut butter with a melon baller.

Fill the impression with the peanut butter.

Fold the cookie dough over the peanut butter.

Bake at 350 F. for 9 – 10 minutes. They will be soft, so be careful not to overcook.
