Watermelon Jell-o

Try this recipe to bump your party up a notch. Truth be told, I found another version of this in alcohol form called “watermelon shots” where you put vodka in the batch. But this is a kid-friendly, non-alcoholic recipe.

This one is pretty self-explanatory.

All you do is cut the melon in half, scoop it out…

…mix up the jell-o, pour it in the shell of the watermelon, chill for 3 -4 hours, and slice it up as you ordinarily would.

 

The trick is to add less water than the recipe calls for so it holds its form when you cut it up into slices. For a small watermelon, you’ll need 2 packets of watermelon jell-o. It will call for 2 cups of boiling water and 2 cups of cold water. I just add 1 cup of cold water.

For a large watermelon, you’ll double this recipe, but you should cut the melon lengthwise (below) so it is not so deep when you cut it in half. KWIM?

You can also change up the flavors and do grape, sour apple–whatever. My kids LOVED the grape. Period.

*Helpful hint: While singing in a choir, if you don’t know the words to the song, just open your mouth wide and sing “wah-ter-meh-lon” like you mean it, and no one will know the difference. You’ll blend right in. I know from experience.
