I had the craziest hankering for a deep-fried peanut butter and banana sandwich the other day. I honestly don’t know where it came from. No, I’m not pregnant. I just saw it in a vision. Then I realized the deep fried part probably wouldn’t work out very well, so I thought maybe I could grill it in butter instead. Turns out, it’s a pretty common thing to make. It’s called…get this: a grilled peanut butter banana sandwich.
I know. Huge surprise.
Well anyway, I got to work putting it together, sat down to take my first bite, and I can honestly tell you that for a split second I thought I might actually be in heaven. Then I looked around and noticed my cluttered kitchen and was brought back to earth. But it was still exquisitely delicious. I actually had this for dinner that night. It’s probably more appropriate as a breakfast, or a light dessert. But I make the rules around here, so I had it for dinner.
So here’s how you make it:
Put a layer of peanut butter, cinnamon, then honey on a piece of bread.
Add thick slices of banana.
Put a piece of bread on top, lather both sides in butter (the salted kind), and throw it on the griddle until crispy, golden brown.
- 1 banana
- 2 pieces of bread
- 2 Tbsp peanut butter
- cinnamon
- honey
- salted room-temp butter
- Preheat the griddle to medium heat.
- Layer peanut butter, cinnamon, honey, and banana on one slice of bread.
- Cover with another slice of bread on top and spread butter over each side.
- Grill until crispy and golden brown.
- Serve with a glass of milk or fruit. Or nothing at all.
