Raspberry Lemon Puree

This topping works great with just about any dessert or yogurt of your choice. Or you can put it on my famous multigrain blueberry oatmeal waffles!

The lemon juice in this recipe picks up the raspberry, and the maple syrup mellows out the tartness of both. You can also use agave or honey instead of the syrup. Whatever makes your mouth happy.

Incidentally, I discovered today from eofdreams.com that if you dream about raspberries, it means you will be meeting adventure soon. I wonder what adventures come if you blend them up rather than dream about them???

 

Raspberry Lemon Puree
 
Ingredients
  • 1 cup of raspberries
  • 2 tsp freshly squeezed lemon juice
  • 1 Tbsp water
  • 1 Tbsp raw maple syrup
Instructions
  1. Blend ingredients together in food processor until consistency is smooth. Pour over favorite treat.
Notes
You can substitute the lemon juice with 1 tsp of vanilla extract for a more subdued, sophisticated taste. A raspberry vanilla puree might work well on chocolate brownies, for instance.
