Fajita Chicken Quinoa

  • 1 C quinoa
  • 2 Tbsp butter
  • ½ C chicken broth
  • ¼ C water
  • 4 mini bell peppers, diced
  • 1 red onion, diced
  • 1 Tbsp olive oil
  • 4 large chicken breasts
  • 2 Tbsp olive oil or butter
  • 1 lime squeezed
  1. Toast the quinoa in butter on medium low heat for 5 minutes, or until golden brown.
  2. Add broth until barely covering the quinoa, then add water, turn heat to low and simmer.
  3. While this is simmering, sautee peppers and onions in butter or olive oil for 5 - 6 minutes, until slightly soft. Add this mixture to the quinoa, stir, and simmer on low while chicken cooks.
  4. Slice chicken into thin strips, season them generously with fajita seasoning mix, and sautee them in olive oil until juices run clear (about 8 minutes.)
  5. Combine all ingredients together into one large skillet, and serve.
