Spaghetti Spaghetti

  • 2 large zucchini (as straight as you can find, and slightly soft)
  • 1 large summer squash
  • 1 spaghetti squash
  • Sauce of your choice
  1. Set a pot of water to boil.
  2. Wash all the squash/zucchini and peel it until the flesh runs out and you get to the seeds
  3. Blanche the "noodles" in boiling water for 30 seconds
  4. Drain and serve with your favorite sauce on top
Spaghetti squash does not peel like zucchini. It is flaky and fragile, so do not expect to get noodles out of it. Use it as a garnish or to add flavor and texture to any meal.
