This amazing little melt will make any lunch feel like you’re sitting in a quaint cafe somewhere, away from the worries of life. All you do is spread on some chipotle mayo or butter, and then layer each ingredient as you like it.
You can either bake it at 425 F. for 6 – 7 minutes, or you can broil it for about 5 minutes. But if you choose to broil it, then you’ll need to toast the bread first, since the bread layer is on the bottom and will not get any attention in the oven but drippings from the tomato juice.
Serve with some spicy tomato bisque and you’ll be feeling quite European for the afternoon.
If you want to go paleo, all you have to do is substitute the bread with baked sweet potato slices (please see my Sultry Sweet Potato Sandwich for the recipe).
- 1 Tbsp chipotle mayo
- ½ avocado, sliced
- Tomato slices
- Monterey Jack cheese slices
- 1 slice of bread
- Preheat the oven to 425 F.
- Layer each ingredient to your liking on the bread of your choice.
- Bake in the oven for 6 - 7 minutes, or until the cheese is melted and the bread starts to toast up.
