Strip down to a more natural, healthy version of tacos using homemade taco seasoning and organic zucchini…no one will even notice!
You can make the seasoning in 30 seconds, and you can feel good about it because it does not contain preservatives, additives, or fillers like the packaged seasonings usually do. It has a fresh, natural, from-scratch taste that is more authentic. I definitely love it, but more importantly–the kids love it.
The zucchini is simply an age-old trick all moms use to get their kids to eat more veggies. I dice mine up small and add it to the meat when I season it so it blends well. If any nosy kids start inquiring, distract them with setting the table or helping prepare the meal. Older kids might get a little suspicious about the zucchini. But they’ll get over it.

- 1 lb. ground beef
- 2 medium sized zucchini
- diced tomatoes
- lettuce
- shredded cheese
- chopped olives
- sour cream
- salsa
- Brown the meat and drain the grease.
- Add the seasoning at the same time as the chopped zucchini, and cook for 5 minutes together.
- Stack your taco with the meat mixture and your choice of vegetables and salsas.
